Ingredients
Crust
2 cups graham cracker crumbs
1/2 cup melted butter
2 tbsp sugar
Cheesecake Layer
2 packages (8 oz each) cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 tub whipped topping (like Cool Whip), thawed
Blueberry Topping
3 cups blueberries (fresh or frozen)
1/3 cup sugar
2 tbsp lemon juice
2 tbsp cornstarch
1/4 cup water
Instructions

  1. Make the Crust
    Mix graham cracker crumbs, sugar, and melted butter.
    Press firmly into the bottom of a 9×13-inch dish.
    Chill in the fridge while making the filling.
  2. Make the Cheesecake Filling
    Beat cream cheese until smooth.
    Add powdered sugar and vanilla.
    Fold in whipped topping gently.
    Spread evenly over the crust.
  3. Make the Blueberry Topping
    Add blueberries, sugar, and lemon juice to a saucepan.
    Cook over medium heat until berries start bursting.
    Mix cornstarch with water, then stir into berries.
    Cook 2–3 minutes until thickened.
    Let cool completely.
  4. Assemble
    Spoon cooled blueberry topping over cheesecake layer.
    Refrigerate at least 4 hours (overnight is best).
  5. Serve
    Slice chilled and enjoy!
    Optional: garnish with extra blueberries or whipped cream.
